Green Cardamom is classed as the highest grade available and will fetch a superior price at the spice market. Green Cardamom has an intense, unique flavor and is often used to flavor sweet dishes found in Indian cuisine.

Green Cardamom is one of the most expensive spices by weight in the world. Only a few others, such as Saffron and Vanilla, are more expensive. The main reason this spice is so expensive is because it needs to be harvested by hand. It is a very labor-intensive handpicking process.

The ‘Green Cardamom pods’ is picked whilst still immature and is then sundried so that it remains green. It’s the hardest to find, it also retains aroma and flavor longer.  

Cardamom has a complex aroma with a piney, fruity, and almost floral/ menthol-like flavor. It's been used for centuries to jazz up coffee, teas,  rice dishes, and pastries all over the world. Green cardamom (Elettaria cardamomom) is known as true cardamom. This is the most common variety.
