 Brazilian white pepper (Piper nigrum), particularly varieties grown in regions like Bahia and Pará, is prized for its refined, complex taste. It is notably milder and less intensely aromatic than black pepper, delivering a subtle heat that enhances rather than overpowers 

White pepper from Brazil is a bit more white and cleaner than if compared to Vietnam.

  • The ASTA Cleanliness Standard: Governed by the American Spice Trade Association, this limits allowable foreign matter (twigs, stones) to under 0.2% to 0.3%, and restricts "light berries" or hollow shells.
  • Moisture Maximums: Strictly capped between 13.0% and 13.5%. White pepper is heavily soaked during production, so inadequate mechanical or solar drying leads to mold growth and volatile oil degradation during shipping.
  • Microbiological Sterilization: The European Union and US markets frequently require proof of Steam Sterilization (HTST) or OZONE treatment to guarantee the product is 100% negative for Salmonella and E. coli.
