Harvest period: March onward, depending on region and variety.
is a premium, high-quality pepper cultivated on Bangka Island, Indonesia, known for its distinct, pungent aroma and sharp, fiery flavor. It is produced by soaking ripe berries in water to remove the husk and sun-drying them, creating a cream-colored, mild-yet-earthy spice ideal for light-colored sauces, fish, soups, and poultry.
Bulk density: 600 g/L
Production Process:
The pepper is grown on Piper nigrum vines and is hand-picked when fully ripe. To achieve its signature color, the peppercorns undergo a process of:
Soaking: Immersion in water (sometimes running streams) for several days to remove the skin.
Cleaning: A traditional, sometimes manual process to separate the seeds from the fruit spike.
Drying: Sun-drying to achieve a pale, cream-colored, or light beige appearance.
Muntok white pepper is a staple in high-end culinary applications, offering a cleaner, more refined, and "animalic" aroma compared to black pepper.
Muntok white pepper offers a unique taste that is less earthy than black pepper, making it a favorite for specific cuisines and dishes.
Flavor Notes: It provides bright, herbaceous, and floral notes with hints of mint and eucalyptus. Some experts also note a rich, winey, and at times a slightly musty or musky aroma.
Heat Level: It delivers a clear, sharp, and pungent heat.
Pairings: It is particularly well-suited for light-colored dishes where dark specks would be undesirable, such as creamy sauces, white fish, poultry, and soups. It is also traditionally used in the foods of Southeast Asia and Southern and Eastern Europe.
