Brazilian black pepper, largely sourced from Pará and Espírito Santo, is a premium, woody, and citrusy spice with high piperine content (minimum 2.0%). Key standards for export involve 500-550 g/l density.
Grade Standards (B1): Generally defined by high density, often specified as is greater than or equal to 550 g/L or is greater than or equal to 560 g/L, with lower impurities (approx. 2%) compared to B2, but below the premium ASTA grade
Moisture Content Dried Peppercorns - Maximum 12%.
Maximum Mosture Limit: The European Spice Association (ESA) Quality Minima Document, which applies to much of the global market including Brazilian exports, sets the maximum moisture content for black pepper at 12%.

The process of making black pepper involves harvesting the berries before they fully ripen and then drying them until the outer layer turns black and wrinkled. This results in the familiar peppercorns that are used whole or ground into a fine powder. Black pepper’s distinctive heat comes from its primary compound, piperine, which not only adds spiciness but also enhances the flavors of other ingredients in a dish.

Pará (North): Known for smaller, highly aromatic, and pungent peppers such as Cumari do Pará (small, round/teardrop) and Pimenta de Cheiro.
Bahia (Northeast / Espírito Santo : dried peppercorns for seasoning, Bahia’s are generally larger. Famous for the Malagueta pepper, which is small in the context of global peppers (about 2 inches or 5 cm), but generally larger than the small, teardrop-shaped peppers commonly used in Northern Brazilian cuisine.
Market Grades in Brazil
ASTA: Top tier; machine-cleaned, high density, and lowest impurities.
B1 (Brazil 1): High quality (often ~550–560 G/L) but may have slightly higher impurity tolerances than ASTA.
B2 (Brazil 2): Lower density (often ~500 G/L) and higher impurity limits, typically used for oil extraction or lower-tier markets.
Piper Nigrum: This is the most widely cultivated and exported type of pepper in Brazil, known as black pepper. The "Belém" variety is a common one grown in Pará, known for its large berries and used in bulk exports.
Capsicum Baccatum: This species includes unique local varieties like the "Brazilian Starfish" pepper, known for its distinctive star shape and a fruity, moderately hot flavor (10,000–30,000 SHU). It is popular for salsas and ornamental gardening.
Malagueta Pepper: A small, fiery hot red chile common in Brazilian cuisine, used in traditional sauces like molho apimentado.
Piperine is the primary bioactive alkaloid responsible for the characteristic pungent taste,
sharpness, and aroma of both black and white pepper. It is concentrated in the outer layer of the peppercorn.
Pungency Source: Piperine creates a warm, tingling, sharp flavor, rather than the intense, burning heat of chili peppers.
Concentration: It is found in higher concentrations in black pepper than in white pepper, as the outer layer is removed during white pepper processing.
While black pepper is often considered to have a higher piperine content (up to 9%) compared to white pepper, both are major sources of this compound
