Vietnam is the world's leading producer and exporter of black pepper, with "ASTA" grade (American Spice Trade Association) representing high-quality, cleaned, and often sterilized, premium black pepper, typically ranging from 500-580g/l in density. These peppers are characterized by a pungent aroma, bold flavor, and consistent quality, suitable for international markets.  

Key Aspects of Vietnamese ASTA Pepper:

Standards & Quality: ASTA certification ensures a hygienic, cleaned process with minimal impurities and microorganisms. Common densities include 550g/l, 570g/l, and 580g/l.

Harvest Season: January to April, with prices often lowest in May. 


The process of making black pepper involves harvesting the berries before they fully ripen and then drying them until the outer layer turns black and wrinkled. This results in the familiar peppercorns that are used whole or ground into a fine powder. Black pepper’s distinctive heat comes from its primary compound, piperine, which not only adds spiciness but also enhances the flavors of other ingredients in a dish.

Growing Regions: Most of Vietnam's pepper is grown in the red soil of the Central Highlands (Dak Lak, Dak Nong) and the Southeast (Binh Phuoc).

WHAT IS PIPERINE?

Piperine is the primary bioactive alkaloid responsible for the characteristic pungent taste,

sharpness, and aroma of both black and white pepper.  It is concentrated in the outer layer of the peppercorn. 

  • Pungency Source: Piperine creates a warm, tingling, sharp flavor, rather than the intense, burning heat of chili peppers.
  • Concentration: It is found in higher concentrations in black pepper than in white pepper, as the outer layer is removed during white pepper processing.

While black pepper is often considered to have a higher piperine content (up to 9%) compared to white pepper, both are major sources of this compound

1. Sterilization: Natural vs. Chemical

  • The EU Approach: Strongly favors "Natural" processing. The use of Ethylene Oxide (EtO) is strictly prohibited for sterilization. Importers must use Steam Sterilization or irradiation. Vietnam processors targeting Europe have invested heavily in high-tech steam facilities to meet this "clean label" demand.
  • The FDA Approach: More flexible on methods but rigorous on results. The US allows Ethylene Oxide (EtO) and propylene oxide, provided residues stay within EPA-approved tolerances. However, the focus is strictly on a "5-log reduction" of pathogens like Salmonella regardless of the method used. 


Brazil pepper often gets steam treatment at certified facilities in Europe (especially for EU market requirements), because in-origin capacity can be limited.  We support it through partner facilities when required.  

2. Recent Alignment & Enforcement (2025–2026)

Vietnam's pepper industry is currently undergoing a massive shift to align with these dual EU and FDA standards: 

  • Traceability & Sustainability: Under the EU Green Deal and "Farm to Fork" policy, Vietnam aims for 40% GAP-compliant (Good Agricultural Practices) cultivation by 2030, with mandatory traceability codes.
  • Zero Tolerance for Salmonella: Both the EU and FDA maintain zero tolerance for Salmonella in black pepper.
  • The "Vietnam Workaround": Because the EU has de facto banned raw pepper that isn't pre-sterilized, Vietnam has become a global hub for cleaning and sterilizing pepper from other origins (like Brazil) to make it "technically legal" for EU entry.
