Our Peru ginger season typically takes places from July to the end of January. Our fresh organic ginger is a top quality product and is known for its golden color and its bold, rich flavor that is highly favored among consumers. Our ginger is harvested and professionally packed at our facility in the Amazon rainforest of Peru.
Ginger is a spice that took root over 4,000 years ago, and is one of the earliest spices known in Western Europe. Although often called “ginger root” it is actually a rhizome. It is available in whole raw root (fresh ginger) and dried roots. The ginger plant requires a consistently warm and moist climate, brilliant sunshine, and heavy rainfall.
The harvest begins nine months to a year after planting, when the stalks begin to wither. The rhizomes are twisted and dug up carefully with a hoe. These ‘hands’ are then cleaned, washed, scraped, boiled, peeled carefully with specially designed knives and dried in the sun for about eight days. Ginger is a soil-exhausting crop, requiring heavy fertilization, so when possible it is grown in rotation with other crops.

The perky heat of ginger is concentrated in the dried powder, and we like to keep plenty on hand for baking, marinades and sauces. Classic jerk seasonings from the Caribbean are heavy in heat, so the relatively mild bite of ginger powder is a nice contrast in sauces from the region.
