WHY BRAZSPICE FOR PEPPER - Product Overview

Brazspice Spices  international spice brokerage house, supplies export-grade Indian black Malabar pepper and Tellicherry  Pepper for buyers seeking premium quality, distinctive aroma, and traditional origin character.

Our focus on pepper as core business ensures you get market-aligned quality, consistent execution, and sourcing from verified origins.

India is one of the world’s oldest pepper origins, valued for its strong flavour profile and historical reputation. Indian pepper is typically selected for quality-driven programs, specialty blends, and applications where aroma and origin identity matter more than sheer volume.

We support Indian pepper supply selectively, aligned with specification, seasonality, and destination requirements.

Typical Supply Types – India

Tellicherry Black Pepper -  Premium grade · Large berry. Harvested later in the season, traditionally from Kerala.

Tellicherry is considered higher quality than Malabar and has larger berries. Malabar peppercorns are typically a bit fruitier than their counterpart. Black, white, red and green peppercorns all come from these plants, but are harvested and treated at different times of year.

Key Characteristics of Tellicherry Black Pepper:

  • Size and Quality: Extra-large, mature berries, often labeled as "Grade T" or "Bold," which indicates they are 4.25mm or larger.
  • Flavor Profile: Complex and balanced. They are not just hot, but offer bright, citrusy, and fruity notes, along with woodsy, piney, and floral undertones.
  • Heat Level: Milder and more nuanced heat compared to younger, smaller black peppercorns, creating a "warm" rather than sharp experience.
  • Aroma: Pungent, fresh, and intense.
  • Appearance: Larger, wrinkled, dark brown to black in color.
  • Origin: Sourced from the Malabar Coast of India, specifically the Tellicherry (Thalassery) region.

Typical use cases:

Tellicherry peppers are considered superior because they are allowed to ripen longer on the vine, which develops a more robust flavor profile.

Buyer Tip:  When to choose Tellicherry vs Malabar.
Tellicherry is typically chosen for premium whole-pepper and high-aroma applications, while Malabar is favored for balanced flavour and industrial blending. Both are used selectively alongside Vietnam and Brazil origins.

Malabar Black Pepper

Malabar whole pepper refers to premium black peppercorns (Piper nigrum) originating from India's Malabar Coast, renowned for their bold, earthy flavor with citrus and floral undertones. These sun-dried, medium-sized berries offer a balanced, lingering heat, making them a versatile, essential "workhorse" spice for daily cooking, seasoning meats, soups, and marinades.

Malabar Key Characteristics and Uses:

  • Flavor Profile: Bold, pungent, and earthy with citrus, wood, and floral notes.
  • Origin: Kerala, India (Malabar Coast).
  • Culinary Uses: Ideal for grinding into savory dishes, stews, sauces, and even spicy desserts.
  • Distinction: Unlike smaller, fruitier Tellicherry pepper, Malabar is considered the standard, high-quality, pungent, and aromatic peppercorn.
  • Appearance: Small to medium-sized, round, wrinkled black berries.

Quality and Benefits:

  • Rich in Essential Oils: Sun-dried, which helps preserve their potent, aromatic compounds.
  • Versatility: Suitable for diverse cuisines, including Indian (curries, dals) and Western dishes.
  • Pairings: Complements proteins like chicken, pork, beef, and fish, as well as hearty vegetables.

Malabar whole pepper is frequently found in high-quality spice shops and is highly regarded for its consistent, intense, and traditional flavor profile.

Indian pepper is often chosen as a flavour enhancer within multi-origin blending programs.

Supply is primarily conventional, with limited sterilized options depending on lot and timing.

Producing Regions & Harvest

Indian pepper production is concentrated mainly in:

  • Kerala
  • Karnataka
  • Tamil Nadu

Harvest typically occurs between December and March, with availability influenced by monsoon conditions and crop size.

Export availability is seasonal and selective, rather than year-round at scale.

Quality & Compliance

Indian pepper supplied through Brazspice to meet buyer-specific specification confirmed per lot and provided via technical datasheet / Moisture: typically 12% / Export-grade quality standards/ Destination market requirements (EU / US), subject to agreed parameters

Exact parameters depend on crop year, region, and buyer requirements.

Due to the selective nature of Indian supply, early specification alignment is essential.

Packaging & Logistics

Standard export packaging: 25 kg or 50 kg bags with food-grade inner liners / Palletized or loose container loading / FCL shipments preferred / Selected LCL shipments possible depending on volume, products and timing
